Roast Zucchini and Pattypan Squash

Ingredients
- 2 medium zucchini
- 1 medium yellow pattypan squash
- 1 large Red Onion
- 2 Tbsp. each fresh thyme and marjoram leaves
- 2 Tbsp. olive oil
- 1 tsp. salt
- 1/2 tsp. Freshly ground black pepper
Directions
- Step 1Heat oven to 450°F. Have a large rimmed baking sheet ready.
- Step 2Toss all ingredients on baking sheet to mix and coat.
- Step 3Roast 25 to 30 minutes, turning vegetables once, until tender and edges of onions are very lightly charred.
